Enjoy these homemade energy balls as pre-workout boost, mid-afternoon pick-me-up, or anytime you need a healthy and satisfying snack!
Ingredients:
Make 12-15 energy balls
1 cup Medjool dates
1 cup almonds
2 tablespoons cocoa powder
1 tablespoon almond butter
Pinch of salt
Desiccated coconut, for rolling (optional)
Instructions:
Blend Ingredients: In a food processor, combine the pitted dates, almonds, cocoa powder, almond butter, and a pinch of salt. Pulse the mixture until it comes together into a sticky dough. If the mixture is too dry, you can add a squeeze of sweetener (such as honey, maple syrup, agave)
Form Balls: Scoop out about a tablespoon of the mixture and roll it between your palms to form a ball. Repeat with the remaining mixture.
Optional Coating: If desired, roll the energy balls in desiccated coconut for extra flavour and texture.
Chill: Place the energy balls on a baking sheet lined with parchment paper and chill them in the refrigerator for at least 30 minutes to firm up.
Serve or Store: Once chilled, the energy balls are ready to enjoy! Store in an airtight container in the refrigerator for up to one week.
