Banana Oat Pancake

Ingredients:

Makes 4-6 pancakes

  • 2 ripe bananas

  • 2 eggs

  • 1/2 cup rolled oats

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon vanilla extract

  • Pinch of salt

  • Cooking spray or butter, for greasing the pan

  • Greek yogurt and berries, for serving




Instructions:


  1. Blend the Oats: Place the rolled oats in a blender or food processor and blend until they form a fine flour-like consistency.

  2. Prepare the Batter: Peel the ripe bananas and place them in a mixing bowl. Mash the bananas using a fork until smooth. Add the blended oats, eggs, baking powder, vanilla extract, and a pinch of salt to the bowl with the mashed bananas. Mix everything together until well combined and a smooth batter forms. Let the batter rest for a few minutes to allow the oats to soften slightly.

  3. Preheat the Pan: Heat a non-stick frying pan over medium heat. Lightly grease the pan with cooking spray or butter.

  4. Cook the Pancakes: Once the pan is hot, pour small portions of the pancake batter onto the skillet to form pancakes of your desired size. Cook for 2-3 minutes, or until bubbles start to form on the surface of the pancakes and the edges begin to set.

  5. Flip and Cook the Other Side: Carefully flip the pancakes using a spatula and cook for an additional 1-2 minutes, or until golden brown and cooked through.

  6. Serve or Store: Serve the banana oat pancakes warm, topped with a dollop of Greek yogurt and fresh berries. If prepping in advance, allow the pancakes to cool completely before storing them in an airtight container in the refrigerator.
