Courgette and Ricotta Tart Recipe

Ingredients:
1 sheet of ready-to-roll puff pastry
200g ricotta cheese
1 teaspoon fresh thyme leaves
1 lemon (juiced and zest)
2 small courgettes, thinly sliced
2 tablespoons fresh mint leaves, chopped
2 tablespoons roasted pumpkin seeds
30g Parmesan cheese, grated
Salt and pepper to taste
Olive oil
Instructions:
1. Preheat the Oven Preheat your oven to 200°C (392°F) and line a baking sheet with parchment paper. 2. Prepare the Puff Pastry Unroll the puff pastry sheet onto the prepared baking sheet. Using a fork, gently prick the pastry all over, leaving a border of about 1 inch around the edges. This will prevent the pastry from puffing up too much in the centre. 3. Prepare the Ricotta Mixture In a bowl, combine the ricotta cheese, fresh thyme leaves, lemon juice, and a pinch of salt and pepper. Mix well until everything is evenly incorporated. 4. Spread the Ricotta Mixture Spread the ricotta mixture evenly over the puff pastry, staying within the border you created. 5. Arrange the Courgette Slices Place the thinly sliced courgettes on top of the ricotta mixture, overlapping them slightly. This will create a beautiful pattern. Season with a bit more salt and pepper and a drizzle of olive oil. 6. Bake Place the baking sheet in the preheated oven and bake for 20-25 minutes or until the puff pastry is golden brown, and the courgettes are tender. 7. Garnish Remove the tart from the oven and sprinkle the fresh mint leaves, roasted pumpkin seeds, and grated Parmesan cheese evenly over the top. 8. Serve Slice your Courgette and Ricotta Tart into portions and serve it warm. It's perfect as an appetiser, side dish, or even a light main course.
