Gnocchi Tray Bake Recipe

This hearty gnocchi tray bake combines tender potato gnocchi with a colourful array of roasted vegetables, creating a vibrant and flavourful dish that's both satisfying and easy to prepare.






Ingredients:

Serves 4

  • 500g store-bought gnocchi

  • 1 large red bell pepper, sliced

  • 1 large yellow bell pepper, sliced

  • 1 red onion, sliced

  • 200g cherry tomatoes

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • Salt and pepper, to taste

  • Grated Parmesan cheese, for serving

  • Fresh basil leaves, for garnish


Instructions:

  1. Preheat the Oven: Preheat your oven to 180°C fan.

  2. Prepare the Vegetables: In a large baking tray, combine the sliced red and yellow bell peppers, sliced red onion, cherry tomatoes, minced garlic, olive oil, dried oregano, dried basil, salt, and pepper. Toss everything together until the vegetables are evenly coated with the seasoning.

  3. Add the Gnocchi: Scatter the store-bought gnocchi over the top of the seasoned vegetables in the baking tray. Option here to also add some chucks of mozzarella.

  4. Bake in the Oven: Transfer the baking tray to the preheated oven and bake for 20-25 minutes, or until the gnocchi is golden and slightly crispy, and the vegetables are tender and caramelised around the edges.

  5. Serve: Once cooked, remove the tray bake from the oven. Serve the gnocchi tray bake hot, straight from the oven.

  6. Garnish and Enjoy: Garnish the tray bake with grated Parmesan cheese and fresh basil leaves before serving.
