Potato and Sauerkraut Rosti

Potatoes are a nutrition powerhouse and they are so versatile. This is a classic recipe that I've added some sauerkraut to for some gut loving benefits!

Recipe:
(Serves 1)
1 large potato, peeled
2 heaped tablespoons of sauerkraut
2 tablespoons of flour
Salt and pepper to taste
2 tablespoons of vegetable oil
Instructions:
In a clean kitchen towel, squeeze out the excess moisture from the grated potato. I’ve done this using a thin tea towel.
In a bowl, combine the grated potato, sauerkraut, and flour. Mix well to ensure even distribution.
Season the mixture with salt and pepper according to your taste preferences.
Heat 2 tablespoons of vegetable oil in a pan over medium-high heat.
Take the entire mixture and shape it into a single large patty on the pan, flattening it with a spatula.
Cook the rosti for about 4-5 minutes on each side or until golden brown and crispy. I flipped mine using a plate.
Serve the potato rosti hot adding your toppings! I’ve gone for smoked salmon, sauerkraut, sour cream and dill.
