This Prebiotic Artichoke Salad is a delicious way to incorporate these benefits into your meals. Butter beans and artichokes are excellent sources of prebiotic fibre, which supports the growth of healthy gut bacteria. Butter beans are rich in soluble fibre, aiding digestion and helping to maintain stable blood sugar levels. Artichokes, on the other hand, are packed with inulin, a type of prebiotic fibre known for its positive impact on gut health.

Ingredients:
- 1 can of butter beans, drained and rinsed
- 1/2 courgette, grated
- 1 jar of artichokes, with 2 tablespoons of the oil reserved
- 2 spring onions, sliced
- A handful of fresh mint, chopped
- 1/3 block of feta cheese, crumbled
- A handful of roasted pumpkin seeds (heated on a frying pan for 2-3 minutes)
- A drizzle of extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions:
1. Combine the drained and rinsed butter beans, grated courgette, artichokes with the reserved oil, sliced spring onions, chopped mint, crumbled feta, and roasted pumpkin seeds in a large bowl.
2. Drizzle with extra virgin olive oil and lemon juice, then season with salt and pepper.
3. Gently toss the salad to mix all ingredients evenly, then serve and enjoy on its own or as a side salad.
