Salmon and lentil salad: Easy prep lunch

When you're having a hectic day the last thing you want to be doing is spending time in the kitchen cooking lunch. To then have to eat it in 5 minutes before your next meal.


Well this is my extremely low prep, salmon and lentil bowl.


Ingredients:

Serves 1

  • 1/2 pack of puy lentils

  • Ready to eat salmon fillet

  • Roasted red pepper, sliced

  • Feta, cubed

  • Rocket

  • Spring onions

  • Pune nuts

  • Pumpkin seeds








Method:

  1. Heat up 1/2 bag of puy lentils in the microwave. You can use any grain or rice packet, or 1/2 tin of beans such as chickpeas or butterbeans.

  2. Once heated assemble the bowl by adding the puy lentils, a handful of rocket, feta, roasted red pepper.

  3. Finish by sprinkling the spring onions and seed mix.
