Salmon Traybake for Two

What is not to love about a dinner that can be cooked in one tray! Perfect for a speedy mid week.
Ingredients:
Serves 2
2 salmon fillets
200g baby potatoes, halved
2 bell pepper, sliced
1 red onion, sliced
1 cup cherry tomatoes
2 tablespoons olive oil
1 clove garlic, minced
1/2 lemon, thinly sliced
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
Salt and pepper, to taste
Fresh parsley, chopped, for garnish
Instructions:
Preheat the Oven: Preheat your oven to 200°C
Prepare the Vegetables: Place the halved baby potatoes, sliced bell pepper, sliced red onion, and cherry tomatoes in a mixing bowl. Drizzle the vegetables with 1 tablespoon of olive oil and sprinkle with minced garlic, dried oregano, dried thyme, salt, and pepper. Toss until the vegetables are evenly coated with the seasonings.
Assemble the Traybake: Line a small baking sheet with parchment paper or aluminum foil. Arrange the seasoned vegetables in an even layer on the baking sheet.
Season the Salmon: Drizzle the salmon fillets with the remaining 1 tablespoon of olive oil. Season the salmon with salt, pepper, and a sprinkle of dried herbs. Place lemon slices on top of each salmon fillet.
Bake the Traybake: Transfer the baking sheet to the preheated oven and bake for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender and lightly browned.
Serve: Once cooked, remove the traybake from the oven and sprinkle with chopped fresh parsley for garnish.
