Speedy Mid-Week Dinner

This is such a simple recipe but always a crowd pleaser! Great for entertaining (summer garden party?) or for a mid week dinner.

I used ready to roll puff pastry and added pesto to the base. I made mine using basil, pine nuts, lemon juice, olive oil and nutritional yeast as I wanted it to be vegan, but you could also use pesto from a jar.
This was topped with a large handful of sliced tomatoes and a jar of artichokes, sliced in half.
Cook in the oven for about 25-30 minutes at 180C fan until the pastry is golden. Finish with a sprinkling of pine nuts and basil.
Enjoy with a side salad, if you're having as part of a meal add some chicken or salmon for protein.
