Ingredients:
Serves 4
500g baby potatoes, halved
2 bell peppers, sliced
1 red onion, sliced
2 carrots, sliced
1 courgette, sliced
200g cherry tomatoes
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper, to taste
Fresh parsley, chopped, for garnish
Instructions:
Preheat the Oven: Preheat your oven to 180°C fan.
Prepare the Vegetables: In a large baking tray, combine the halved baby potatoes, sliced bell peppers, red onion, carrots, courgette, cherry tomatoes, and minced garlic.
Season and Toss: Drizzle the olive oil over the vegetables. Sprinkle with dried thyme, dried rosemary, salt, and pepper. Toss everything together until the vegetables are evenly coated with the seasoning.
Bake in the Oven: Transfer the baking tray to the preheated oven and bake for 25-30 minutes, or until the vegetables are tender and golden brown around the edges. You can stir halfway through the cooking time for even browning.
Garnish and Serve: Once cooked, remove the tray from the oven. Garnish the vegetable and potato traybake with freshly chopped parsley before serving.
This vegetable and potato traybake serves as a versatile base that pairs well with various protein sources. Here are some protein options you could cook alongside or serve with the traybake:
Chicken: Season chicken breasts or thighs with your favourite spices and herbs, then place them on the baking tray alongside the vegetables. Bake until the chicken is cooked through and juices run clear.
Sausages: Choose your variety of sausages, such as pork, chicken, or vegetarian sausages. Arrange them on the baking tray with the vegetables and bake until they are golden brown and cooked through.
Tofu: Cube firm tofu and toss it with olive oil and your choice of seasonings. Add the tofu to the baking tray with the vegetables and bake until it is crispy and golden.
Salmon: Season salmon fillets with lemon juice, garlic, and herbs. Place the salmon fillets on top of the vegetable and potato traybake and bake until the salmon is cooked to your desired level of doneness.
Chickpeas: For a vegetarian option, add drained and rinsed chickpeas to the baking tray with the vegetables. The chickpeas will become crispy and add a protein-rich element to the dish.
