Wholemeal Chicken Wrap with Hummus, Rocket, and Roasted Red Peppers

Ingredients:

Serves 2 (one wrap each)

  • Wholemeal gluten-free wraps: 2

  • Chicken breast: 1 large, cooked and sliced

  • Hummus: 4 tablespoons

  • Rocket: A handful

  • Roasted red peppers: 1 jar, drained and sliced

  • Olive oil: For cooking

  • Salt and pepper: To taste

  • Optional: Sliced red onion or cucumber for extra crunch


Instructions:

  1. Prepare the Chicken: If the chicken isn't already cooked, season a chicken breast with salt and pepper. Heat a splash of olive oil in a frying pan over medium heat. Cook the chicken for about 6-7 minutes on each side, or until golden and cooked through. Let it rest for a few minutes before slicing it thinly.

  2. Warm the Wraps: Gently warm the gluten-free wraps in a dry pan or microwave to make them more pliable and easy to roll.

  3. Assemble the Wraps: Lay out the warmed wraps on a flat surface. Spread about 2 tablespoons of hummus on each wrap, leaving a small border around the edges to prevent spillage when rolling. Add a layer of rocket leaves over the hummus. Add the sliced roasted red peppers evenly across the rocket. Arrange the sliced chicken on top. If using, add sliced red onion or cucumber for an extra layer of texture and flavour.

  4. Roll the Wraps: Carefully roll up the wraps tightly, starting at one end and tucking in the sides as you go to keep the fillings contained. Once rolled, you can either cut the wraps in half diagonally to serve or wrap them in parchment paper for an on-the-go meal.

  5. Serve: Enjoy your wraps immediately, or keep them refrigerated until ready to eat. They are perfect for a quick meal or a packed lunch.
